Christmas Eve Pig Roast

Every year on Christmas Eve our family hosts a pig roast.Our whole family comes to celebrate. I look forward to this party every year. I am able to see all of my family. We have such a great time.

It is a time-honored cuban tradition. The pig takes forever to cook put it tastes super good. it’s always very crispy. They smoke and cook the meat over hot coals so it is super tender. It falls right off the bone! DSC00174.jpg

It is super fun to watch the pig cook. As a way to pass time we talk and catch up with our family while eating cheese!! We also play poker with pennies I always lose because I’m not very good! DSC03319.jpg

We eat the pig with rice and beans, salad, yuca a vegetable similar to a potato and a great gravy. The  meal is always gone super quickly, but if there are left overs we have them the next day!

Herb Crusted Lamb Dinner

Today we went to La District shopping for food supplies. It is down town in the Brookfield mall. La District is an open-style French market with high quality ingredients. It has cheeses, meats, fresh produce and many other things. I planned to make Seared Herb Lamb Chops and Wilted Garlic Spinach and pasta. This place had everything we needed and it was super fun to shop there.

The dinner turned out to super well. We had some great cheeses with truffle honey and rosemary crackers. The lamb were a perfect medium, and the spinach was nice and soft. However the trick to a good sear is to use high quality butter on medium heat so that the lamb has time to form a crust but also cook all the way through.

 

Tip: hot oil and water are not friends! If combined step back right away because the oil will start to spatter every where.

Thanksgiving

Thanksgiving is one of my families most important traditions. Every year, Thanksgiving gets more and more evolved. It is an all day event and my dad and I usually are the ones who cook  dinner, but my siblings also pitch-in. But because our family is cuban, we put our own twist to the traditional feast. I am usually in charge of the Hors d’oeuvres, the bread, some of the sides, and the desserts.

Every year we try new recipes. This year we made a goat cheese and caramelized onion flat bread. Also, I made homemade brioche bread that my aunt taught me how to bake. Last year my dad deep fried the turkey.

Some recipes are still the same like the bagel chips and ricotta. All the desserts have been the same as well as the butternut squash soup, the rice and beans, and the chorizo stuffing.

We always have family over such as my aunt and my grandparents. Sometimes our family will help us cook the rice and beans or the stuffing.

Family is a big part of our Thanksgiving, especially because it’s my grandmothers birthday on the 25th of November. We always celebrate it on Thanksgiving and we either make cupcakes or a cake for her.
